Carolientje is a collection of seven handcrafted beers from Arnhem, brewed by Björn de Waal, a brewer with a passion for flavour, provenance, and craftsmanship.
Each Carolientje beer is brewed in small batches using the traditional top-fermentation method. Carefully selected local ingredients create a beer range with a distinctive signature of its own.
For Björn, inspiration begins in nature, in memories, and in the stories behind every ingredient. Hand-picked elderflowers from his mother’s home, apricots from the Achterhoek region, and seasonal herbs from local growers give each beer its own recognisable character.
Just as in his culinary work, Björn chooses distinction and originality over trends. He seeks an authentic connection with every ingredient and brews beers that honour craftsmanship while allowing the character of the region to shine through.
Each batch is given time to mature gently and is only bottled and labelled by hand when flavour, balance, and complexity have fully come together.
The aroma of this Pale Ale is lightly hoppy, with a distinct and recognisable fragrance of elderflower. Its subtly sweet character gives the beer a rounded mouthfeel, while the fresh, floral notes create a lively and elegant impression.
This Pale Ale pairs beautifully with fresh white asparagus from the Dutch season. Think tarragon hollandaise, Opperdoezer potatoes, and a beautifully roasted ham hock, lightly marinated with honey and whisky.
This beer is bottle-conditioned and therefore contains a natural yeast sediment at the bottom of the bottle.
Pour slowly and carefully without shaking the bottle. Leave the final small amount in the bottle so the sediment remains behind.
