This French estate, just outside Coudoux, has been surrounded by vineyards since the early 18th century. The estate is owned by the Lapierre family. It is situated in Provence, between Aix-en-Provence and the town of Salon-en-Provence. The vines are planted on south-facing slopes, allowing the grapes to make the most of the already abundant sunshine in this region. The mistral – the cold, north to north-westerly Mediterranean wind – which is, as it were, drawn through the Rhône Valley, together with the ideal soil composition of calcareous clay and the very favourable microclimate, ensures the great success of this wine. The vineyards of Saint Hilaire, covering 58 hectares, lie within the Coteaux-d’Aix-en-Provence appellation.

Château Saint Hilaire rosé is made from three grape varieties: Syrah (40%), Counoise (40%) and Grenache (20%). For this prestige wine, the grapes are hand-selected from the finest plots. The vinification process is traditional. This means that only red grapes are used. The skins of these grapes are left to macerate in their juice for a few hours, allowing them to impart colour to the must. This creates the beautiful rosé colour and the elegant, fruity finish. After maceration and pressing, fermentation takes place in stainless steel tanks. Finally, the young wine remains in the tank for a further 6 months, after which it is bottled.
